Remember my aunt who is always making things for the whole family? Recently she made something I have not eaten for quite a while that is Sambal Heh Bee. Sambal Heh Bee or Sambal Udang Kering (in Malay) is made from dried prawns, chillies and aromatic herbs like lemongrass and turmeric. The sambal is dry and you can use it to make sandwiches or eat it with white rice. Long long ago, when I went to university, she will make one big bottle for me that I will eat slowly as I had to make it last until my summer holidays.
My sambal stash has been sitting in the fridge for quite some time so I thought it is time to cook it this week. I fried chopped onions until they were fragrant and added the sambal to stir fry. Then I added peeled tiger prawns, my mother had given me and the asparagus left over from IMBB. Fantastic stuff and everything tasted so great with piping hot rice.
For those who wish to try their hand in making the sambal, Lilian from Malaysia Best has the recipe on her Penang Faces website. Do give it a try as the sambal is excellent and so aromatic.

AG - I rarely see this sambal though in the supermarkets so I think you have to mix it at home. Do give it a try, it is very yummy.
