One day after shopping in Ikea, we spied tall cans of pear cider or perry from a Swedish company called Kopparbergs.Similar to apple cider, this cider is non-alcoholic, sweeter and fizzy. I decided to whip up a dish based on the pear cider from chicken breasts, pear slices and onions. Using the same principles as cooking apple cider chicken, it was simple and yummy especially when the juices mixed with the sweet pear cider.
If you wish to try this at home, it's very simple. Get chicken breasts and slice them into half sideways (if they are thick). You can also pound them to make them thinner. Season the chicken breasts with salt and pepper. Pan fry these in a frying pan to brown and then remove. Slice pears and onions and pan fry in a frying pan till golden brown. Add the chicken and stock plus the pear cider. Leave to boil in the juices and to reduce. This will add flavour to the chicken, pear slices and onions. When you see the sauce thickening, take out from the frying pan and serve. To create the stack, alternate the chicken pieces with the sliced pears and onions. Sprinkle chopped spring onions on top and serve.
